Directions

  1. Slice 4 chicken breast halves in half lengthwise and pound lightly to ½ inch thick. Season both sides evenly with 1½ tsp kosher salt and 1 tsp black pepper.
  2. Dredge each piece in ⅔ cup gluten-free flour to coat, shaking off the excess.
  3. Heat 2 tbsp olive oil and 1½ tbsp butter over medium-high until just beginning to smoke. Add half the chicken and cook undisturbed until browned and it releases easily from the pan, 2½ to 3 minutes. Flip and cook 2 minutes more, then remove.
  4. Add the remaining 1 tbsp olive oil to the drippings and repeat with the rest of the chicken. Reserve it all on a plate.
  5. Reduce the heat to medium and melt the remaining 1½ tbsp butter. Add ¼ cup dry white wine and 1 tbsp capers, scraping up the browned bits, and simmer 2 minutes to reduce slightly.
  6. Stir in ¾ cup chicken stock, ¼ cup lemon juice, and 1 tsp lemon zest. Bring to a simmer and cook 2 minutes.
  7. Return the chicken to the skillet, turning occasionally in the sauce, until it's no longer pink in the center and the sauce has thickened slightly, 3 to 5 minutes.
  8. Off the heat, sprinkle with ¼ cup chopped parsley and serve.
