Oven-Roasted Salmon
Simple, foolproof oven-roasted salmon with crispy skin.
Ingredients
- 2 skin-on salmon BBQ cuts (~0.8 lb each)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lime

Directions
- Pat the salmon dry with paper towels, then rub with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper. Optionally, let it sit at room temperature for ~15 minutes first for more even cooking.
- Preheat the oven to 425°F. Line a baking sheet with foil and give it a light coat of oil.
- Place the salmon skin-side down on the prepared pan. Roast for 12–15 minutes until the internal temperature reaches 125–130°F for medium, or 140°F for fully cooked.
- Remove from the oven and let rest 2 minutes uncovered — don't cover or the skin will go soggy.
- Squeeze 1 lime over the salmon right before serving.
Variants & Notes
- Skin-side down the whole time — no flip needed. The skin protects the flesh and lifts cleanly from the foil once done.
- Pull at 125–130°F for a moist, slightly translucent center. Past 130°F it starts to dry out.
